2 tsp melted ghee or butter
Water for kneading
Oil for frying

Instructions

In a mixing bowl, combine rice flour, urad dal flour, sesame seeds, cumin seeds, asafoetida, crushed red chilies, and salt.
Add melted ghee or butter and mix well.
Gradually add water to the mixture and knead it into a stiff dough.
Pinch small portions of the dough and roll them into small balls or cylindrical shapes.
Heat oil in a deep pan and fry the seedai until they turn golden brown and crispy.
Remove and drain on a paper towel to remove excess oil.

Ingredients

2 cups rice flour
1/4 cup urad dal (black gram) flour
2 tbsp unsalted butter, melted
1/2 tsp sesame seeds
A pinch of asafoetida (hing)
1/2 tsp red chili powder

Water for kneading
Oil for frying

How to prepare this recipe

In a mixing bowl, combine rice flour, urad dal flour, melted butter, sesame seeds, asafoetida, red chili powder, and salt.
Gradually add water to the mixture and knead it into a smooth dough.
Heat oil in a deep pan.
Use a murukku press or a chakli maker with the desired plate and fill it with the dough.
Press the dough into the hot oil in a circular motion to form spirals.
Fry until they turn golden brown and crispy.
Drain excess oil on a paper towel.

Ingredients

1 cup besan (chickpea flour)
1 cup ghee (clarified butter)
1 cup sugar
A pinch of cardamom powder
A handful of chopped nuts (cashews, almonds)

Instructions

Heat ghee in a heavy-bottomed pan.
Add besan to the hot ghee and roast it on low flame until it turns aromatic and changes color.
In another saucepan, heat sugar and a little water to make a sugar syrup. Cook until it reaches a one-string consistency.
Slowly pour the sugar syrup into the roasted besan while stirring continuously to avoid lumps.
Continue cooking and stirring until the mixture thickens and leaves the sides of the pan.

1 cup chana dal (split Bengal gram)
